But enough about me.
As my birthday present to you, I offer one of my favorite dessert recipes. It's very, very rich, but oh, so yummy. Make sure you have a crowd to feed before making it--you'll need lots of mouths to gobble down this goodness.
Chocolate Peanut Butter Cloud
1½ c + 2 tablespoons butter (divided)
1 c sugar
1 large egg
1 t vanilla
¾ c flour
scant 1/3 c cocoa powder
1 c brown sugar
1 c creamy peanut butter
2 c heavy whipping cream
1 T powdered sugar
- Melt ½ cup plus 2T butter and let cool
- Add 1 cup sugar, egg and vanilla, stirring until combined
- Mix in flour and cocoa powder
- Spread evenly in the bottom of a greased 9x13 pan
- Bake at 350° for 15 minutes or until center is set
- Meanwhile, melt remaining butter with brown sugar; stir in peanut butter
- Refrigerate 20 minutes, then beat until light and fluffy
- Whip cream with powdered sugar
- Fold 2 cups whipped cream into peanut butter mixture and spread over cooled crust
- Top with remaining whipped cream
- Serve chilled and cut into 24 pieces
